Dwight Zietlow spent his career selling commercial soda. Now he forages wildflowers and turns them into something far more interesting.

On Saturday, May 16 from 1–3 p.m., Iowisota Retreat and Education Center — just north of Lansing, Iowa — is hosting a hands-on workshop on wildcrafted vinegars, oxymels, shrubs, and sodas. Instructor Dwight Zietlow will teach participants how to make their own natural vinegars and mix unique non-alcoholic beverages using wild ingredients. Everyone takes home a quart jar of their own vinegar start.

Dwight's workshops at the Midwest Wild Harvest Festival are known to fill up fast and are becoming increasingly popular.

The workshop isn't a one-off — Iowisota has been building a calendar of outdoor and wildcrafting experiences all spring, including a recent mushroom workshop, a Spring Wildflower Saunter, and a free Women's Walk in the Woods series that runs monthly through summer. The next Women's Walk is May 17 from 2–4 p.m.

The vinegar workshop is at 2472 IA-26 in Lansing, Iowa, about five miles north of town. Registration is required — full details and sign-up at iowisota.org. Options for a morning hike or overnight stay are also available.
